Ingredients:
Tecate Marinated Mushrooms:
- 4 cloves garlic, minced
- 1/2 cup Tecate® Alta™
- 1/4 cup freshly squeezed lime juice
- 2 tbsp olive oil
- 2 tsp ground cumin
- 2 tsp salt
- 1 tsp black pepper
- 6 large portobello mushrooms, stemmed
Avocado Corn Salsa:
- 2 ripe avocados, peeled, halved, pits removed and chopped
- 2 scallions, thinly sliced
- 1 cup fresh corn
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 2 tbsp Tecate® Alta™
- 1 tbsp freshly squeezed lime juice
- 1 tsp salt
- 1/2 tsp black pepper
Assembly:
- 12 soft flour tortillas (6 inches), warmed
- 1 small red onion, thinly sliced
- 1 cup fresh cilantro leaves
- Lime wedges

These tacos crammed with grilled mushrooms — marinated with Tecate® Alta™ and packed with flavor — are a delicious veggie-based option that tastes hearty and healthy. Perfect for vegans, vegetarians and meat lovers alike!
Procedure
- Tecate Marinated Mushrooms: In small bowl, whisk garlic, Tecate® Alta™, lime juice, oil, cumin, salt and pepper. In shallow dish or re-sealable bag, arrange mushrooms. Pour marinade over mushrooms. Chill in refrigerator for 1 to 2 hours.
- Preheat grill pan or barbecue to medium-high heat. Grease well. In batches, grill mushrooms, turning once, for 4 to 6 minutes until tender and lightly charred. Slice mushrooms.
- Avocado Corn Salsa: Meanwhile, in medium bowl, toss avocados, scallions, corn, red onion, cilantro, Tecate® Alta™ and lime juice. Season with salt and pepper.
- Assembly: Divide Avocado Corn Salsa evenly among warmed tortillas. Top evenly with grilled mushrooms. Garnish with sliced red onion and cilantro. Serve with lime wedges and additional chilled Tecate® Alta™.
Tip: Add 1 small diced jalapeño to mushroom marinade for extra heat, if desired.
